When it comes to making my lunch, I dread the task. I often get sick of salads, soups, and rice cakes. Since being gluten free has its challenges when it comes to lunch, I am always looking for new recipes to switch it up.
Some things I never get sick of are avocados and corn, which makes them the perfect salad topping. You can use whatever you have for fresh or canned veggies and whip up a simple, but flavorful salad for lunch.

Another toppings that go great with this fiesta salad are crumbled tortilla chips, chopped scallions, green chiles and your favorite salsa as the dressing. If you really want to go all out, you can add a dollop of sour cream :) After all, boring lunches are no fun and you should treat yourself!

Easy Fiesta Salad
Ingredients:
2 cups Romaine & Iceberg lettuce, chopped
1 cup grape tomatoes
1/2 avocado, flesh removed, chopped
2 tbsp canned corn, drained
2 tbsp canned black beans, drained & rinsed
3 tbsp salsa for dressing
Fun additions:
Chopped scallions
Chopped green chiles
Tortilla chips, crumbled
Sour cream
Directions:
Prepare all ingredients and combine in a large bowl or pack up in a Tupperware container. Dress with favorite salsa and enjoy!
