Football season is well underway and my favorite game time snack is spinach and artichoke dip. There is something magical about taking healthy spinach and pairing it with bubbly cheese, garlic, and your favorite crackers.
This magical spinach and artichoke dip has become a tradition amongst my college friends. Every year we attend UNH’s homecoming weekend in October, specifically the Saturday morning tailgate event. A morning filled with grilling, champagne toasts, and reminiscing with our fellow alumni also includes a plethora of our favorite tailgating foods. And this dip always makes the cut. Note to self, be sure to stand close when the dip is ready, it will be gone before you know it :)
This cheesy, spinach and artichoke dip is a must for game day appetizers! The best part is the dip is quick to make and easily transported. I simply make the dip the night before and heat it up on the grill until the cheese is bubbly. You can pair the spinach and artichoke dip with your favorite crackers, I enjoy Glutino’s or Mediterranean Snacks brand, or veggie crudités.
Cheesy Spinach and Artichoke Dip
Ingredients:
1 (14 ounce) can artichoke hearts, drained, finely chopped
1 (10 ounce) package of frozen chopped spinach, thawed, well drained
3/4 cup grated parmesan cheese
1/2 cup 2% milk shredded mozzarella
3/4 cup reduced fat mayonnaise
1-2 cloves of garlic, minced
Directions:
Preheat oven to 350 degrees F.
In a large bowl, combine all of the ingredients and mix well. Spoon into a 9 inch pie plate. If desired, you can sprinkle extra parmesan and mozzarella cheese on top. Bake for 20 minutes or until heated through
Tailgating with this dip?
Heat grill to medium heat. Spoon into a 9 inch baking dish (choose a dish that you don't mind if the grill leaves marks). Cover the dip with aluminum foil and cook for 25-30 minutes or until heated through.
